  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into medallions)

Instructions

  1. Clean and pat the chicken dry. Cut along both sides of the backbone to remove it.
  2. Flatten the chicken by pressing down on the back until it lays flat.
  3. Drizzle 1 tablespoon of oil and 1 tablespoon of seasoning inside; massage into meat.
  4. Flip the chicken breast side up and season generously with remaining oil and seasoning.
  5. Tuck butter pieces under the skin of each breast for added moisture.
  6. Sprinkle thyme leaves over the chicken and lay onion medallions in a skillet.
  7. Roast in a preheated oven at 375°F for about 1 hour and 15 minutes, basting every 15 minutes.
