  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract (for filling)
  • ½ cup strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy.
  3. Add egg and vanilla to the creamed mixture; mix well. If using food coloring, add it now.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. In a separate bowl, beat cream cheese with powdered sugar and vanilla until smooth; stir in strawberry jam.
  6. Scoop cookie dough onto prepared sheets and create an indentation in each cookie ball for the filling.
  7. Fill the indentations with cheesecake mixture before baking for about 10-12 minutes or until edges are golden.
