2 lbs boneless skinless chicken breast or thighs
1 onion, thinly sliced
¼ cup chicken broth
Juice of 1 lemon (about 3 tablespoons)
1 tablespoon olive oil
4 garlic cloves, minced
1 ½ teaspoons dried oregano
1 ½ teaspoons dried thyme
1 teaspoon fine sea salt
½ teaspoon black pepper
Instructions
Place the chicken in the bottom of the slow cooker.
Scatter thinly sliced onions over the chicken.
In a bowl, whisk together chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, sea salt, and black pepper; pour over chicken and onions.
Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until cooked through.
Shred the chicken in the slow cooker with two forks and serve warm.
