  • 1 lb shrimp (deveined)
  • 1 cup smoked sausage (sliced)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tsp Cajun seasoning
  • 2 cups chicken broth
  • 2 green onions (chopped)
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté chopped onion and bell peppers until soft.
  2. Add minced garlic and sliced sausage, cooking until golden brown.
  3. Stir in shrimp along with Cajun seasoning; cook until shrimp turn pink.
  4. Mix in uncooked rice, then pour chicken broth over the mixture. Bring to a boil, cover tightly, reduce heat to simmer and cook for about 25 minutes.
  5. Let sit covered for an additional 5 minutes off heat. Fluff with a fork and stir in green onions and parsley before serving.
