  • 16 oz raw medium shrimp (thawed and drained)
  • 1/2 red bell pepper (cut into strips)
  • 3/4 cup all-purpose flour
  • 2 Tbsp cornstarch
  • 2 Tbsp ground cornmeal
  • 1/2 Tbsp seasoned salt
  • 1/2 Tbsp garlic salt
  • 1 tsp lemon pepper
  • 2 tsp paprika
  • 1 Tbsp dried parsley
  • 1/4 cup creamy ranch dressing
  • 1 Tbsp cherry pepper spread
  • 3 Tbsp plant-based parmesan cheese
  • 3 Tbsp olive oil dressing

Instructions

  1. Prepare the spicy ranch by mixing ranch dressing with cherry pepper spread and parmesan cheese. Refrigerate until ready to serve.
  2. Whisk together the flour, cornstarch, cornmeal, seasoned salt, garlic salt, lemon pepper, paprika, and parsley in a bowl.
  3. Reserve half a cup of the breading mixture to create a wet batter by combining it with cold water.
  4. Dip each shrimp and bell pepper strip into the wet batter followed by coating them in the dry breading mixture.
  5. Heat oil in your fryer over medium-high heat and fry each batch until golden brown—about 2-3 minutes for shrimp and 1 minute for peppers.
  6. Drain on paper towels before serving alongside your dipping sauce.
