  • 3 cups green beans (trimmed and halved)
  • 1 large head of broccoli (about 2 cups chopped)
  • 11/2 cups chopped bell peppers
  • 13 ounces smoked sausage (chicken or plant-based)
  • 6 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • Salt and pepper to taste
  • Cooked quinoa or rice for serving (optional)

Instructions

  1. Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. Wash and chop all vegetables into similar sizes for even cooking.
