  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (in oil, drained)
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×4-inch loaf pan and line it with parchment paper.
  2. In a large bowl, whisk together the eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, mix the flour, baking powder, salt, and garlic powder.
  4. Slowly combine the dry ingredients with the wet mixture until just mixed. Fold in the mozzarella cheese, sun-dried tomatoes, and fresh basil.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 40–45 minutes until golden brown and a toothpick comes out clean.
