  • 2 acorn squash
  • ½ pound ground Italian sausage (or turkey sausage)
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • ½ large apple (chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F and line a cookie sheet with parchment paper.
  2. Halve the acorn squash and scoop out the seeds. Place cut-side down on the cookie sheet.
  3. Bake the squash for 20 minutes until tender.
  4. In a skillet over medium heat, cook the ground sausage until fully browned; set aside.
  5. Sauté onions in olive oil until soft; then add kale, garlic, celery, apples, and herbs. Cook until softened.
  6. Mix the cooked sausage back into the vegetable mixture.
  7. Fill each squash half generously with the filling and return to the oven for an additional 15 minutes.
  8. Top with feta cheese and nuts before serving hot.
