  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 tsp coarse sea salt
  • 1 tsp baking soda
  • 2½ cups all-purpose flour
  • 1 cup chopped roasted pistachios
  • Flaked sea salt for garnish (optional)

Instructions

  1. Brown the butter over medium heat until golden, then cool for about 20–30 minutes.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a large bowl, mix the cooled browned butter with both sugars until creamy. Add honey, egg, vanilla extract, coarse sea salt, and baking soda; mix until smooth.
  4. Gradually stir in flour until just combined, then fold in chopped pistachios.
  5. Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 8–10 minutes or until lightly golden around the edges.
