  • 1 lb sushi-grade salmon
  • 4 tbsp Kewpie mayo
  • Vegetable oil (for frying)
  • 2 tbsp Sriracha
  • Sliced avocado
  • Jalapeno for garnish

Instructions

  1. Prepare the sushi rice by mixing rice vinegar with sugar and salt until dissolved. Combine this mixture with cooked sushi rice.
  2. Transfer the seasoned rice to a baking pan lined with plastic wrap, press down gently, and chill in the fridge for at least 4 hours.
  3. When ready to serve, heat vegetable oil in a skillet over medium-high heat. Cut chilled rice into squares and fry until golden brown on both sides.
  4. Assemble by topping each crispy square with sliced salmon mixed with Kewpie mayo and Sriracha, then garnish with avocado, jalapeños, scallions, and sesame seeds.
