  • 1½ cups water (room temperature)
  • 1 teaspoon active dry yeast
  • 3 cups bread flour or all-purpose flour
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 2 teaspoons finely chopped rosemary
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. Preheat your oven to 400°F (204°C) and roast halved garlic drizzled with olive oil for about 40 minutes until soft.
  2. Mix room temperature water and yeast in a bowl; let sit for 10–15 minutes until frothy.
  3. Combine flour, oregano, salt, and rosemary in a large bowl; add yeast mixture and smashed garlic. Stir until combined.
  4. Cover dough and let rise in a warm spot for 8–10 hours.
  5. Shape the dough into a ball; place seam side up in a floured bowl and refrigerate for 1 hour to 48 hours.
  6. Preheat oven to 450°F (232°C) with a Dutch oven inside.
  7. Transfer dough onto parchment paper, score the top, and bake covered for 30 minutes. Uncover and bake for an additional 15–20 minutes until golden brown.
