  • 2 kg Maris Piper potatoes
  • 5 tbsp olive oil
  • 4 sprigs fresh rosemary (or thyme)
  • Salt

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Peel and chop the Maris Piper potatoes into even chunks.
  3. Place potatoes in a large pot with water, rosemary, and salt; bring to a boil.
  4. Parboil for 12 minutes, then drain while retaining some rosemary leaves.
  5. Shake the potatoes in the pot to roughen their edges for better crispiness.
  6. Heat olive oil in a baking dish in the oven until hot, then add the shaken potatoes.
  7. Drizzle with more olive oil and sprinkle generously with salt.
  8. Roast for 45 minutes without disturbance until golden brown.
  9. Flip the potatoes and roast for another 45 minutes until crispy.
