  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic: Cut off the top of the head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  3. Grease a 9×13-inch baking dish with butter.
  4. Slice the potatoes thinly using a mandoline slicer.
  5. Layer potato slices upright in the greased dish.
  6. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the grated parmesan cheese, thyme, nutmeg, salt, and pepper until melted together.
  7. Squeeze out roasted garlic cloves into a bowl and mash into a paste; stir into the creamy mixture.
  8. Pour the mixture over layered potatoes and cover with foil.
  9. Bake covered for about 40 minutes; then uncover and sprinkle with remaining cheeses.
  10. Return to oven for another 30 minutes until bubbly and golden brown.
  11. Let cool slightly before serving and garnish with fresh chives.
