  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)

  • 6 tablespoons butter
  • 3/4 cup half-and-half
  • fresh ground pepper

Instructions

  1. Preheat the oven to 375°F. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft and golden.
  2. Meanwhile, place quartered red potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Cook for about 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves into the pot.
  4. Gently warm butter and half-and-half until melted; pour over potatoes along with salt and pepper. Mash until creamy yet slightly chunky.
