Ingredients

  • 5 cups butternut squash (cubed)
  • 1/2 bulb garlic (bottom half)
  • 1/3 cup olive oil
  • 1/4 tsp kosher salt
  • 4 leaves sage (or 1 teaspoon dried herb)
  • 8 oz feta cheese
  • 32 oz vegetable broth
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 400°F.
  2. In an oven-safe pot, combine olive oil, butternut squash, kosher salt, and any dried herbs. Toss well.
  3. Place the feta cheese and garlic bulb (cut side down) in the center of the mixture. Cover and roast for 45 minutes to an hour until caramelized.
  4. Remove from oven and squeeze out the roasted garlic into the soup. Add honey and vegetable broth, then blend until smooth.
  5. Taste and season as needed before serving.
