  • 500 g frozen raspberries
  • 100 g granulated sugar
  • 1 tbsp lemon juice
  • 120 g water
  • 450 g mascarpone cheese (cold)
  • 120 g powdered sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla paste
  • 480 g heavy cream (cold)
  • 25 ladyfinger cookies
  • Fresh raspberries and lemon slices for decoration

Instructions

  1. Prepare the raspberry sauce by simmering raspberries, sugar, lemon juice, and water in a saucepan over medium heat for about 10 minutes until thickened.
  2. In a large bowl, blend cold mascarpone cheese with powdered sugar, lemon juice, and vanilla paste until smooth. In another bowl, whip heavy cream to soft peaks and gently fold into the mascarpone mixture.
  3. Dip ladyfinger cookies briefly into the cooled raspberry sauce and layer them in a serving dish. Alternate layers of mascarpone mixture and raspberry sauce until all ingredients are used.
