  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup canned pumpkin puree
  • 1/3 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/4 cup cream cheese, softened
  • 2 tbsp heavy cream
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Cream together the butter and sugar in a large bowl until light and fluffy. Add the egg and vanilla extract; mix until well combined.
  2. In another bowl, whisk together flour and salt, then gradually add to the wet mixture to form a soft dough. Refrigerate for at least 30 minutes.
  3. Roll dough into balls (about 1.5 tablespoons each) and place them on a parchment-lined baking sheet, flattening slightly with your thumb to create a well in the center.
  4. Bake for 10–12 minutes until golden at the edges. Let cool.
  5. For the filling, beat cream cheese until smooth, then mix in pumpkin puree, brown sugar, spices, heavy cream, and vanilla until creamy. Chill for 30 minutes.
  6. Once cookies are cooled and filling is ready, fill each cookie well with the pumpkin mixture and top with whipped cream.
