  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 cup applesauce
  • 1/4 cup neutral-flavored oil
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup confectioners sugar (sugar-free or regular)
  • 1 cup vanilla protein powder (optional)
  • 2 tablespoons milk or water (as needed)
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat your oven to 170°C/325°F and line a baking tray with parchment paper.
  2. In a bowl, mix whole wheat flour, protein powder, sugar, and baking powder.
  3. In another bowl, combine applesauce, oil, and vanilla extract; then mix with the dry ingredients to form a dough.
  4. Chill the dough for 15 minutes before rolling it out and cutting into rectangles.
  5. Fill each rectangle with jam, seal edges well, and bake for 10-15 minutes until golden brown.
  6. Let cool before glazing with a mixture of confectioners sugar, milk (or water), and vanilla.
