  • 2 tsp olive oil
  • 4 (6 oz) skinless salmon fillets (1-inch thick)
  • Salt and freshly ground black pepper
  • 2 cloves garlic (minced)
  • 2 1/2 tsp minced fresh rosemary
  • 5 Tbsp chicken broth (divided)
  • 1 1/2 tsp orange zest
  • 2/3 cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 1/2 Tbsp honey
  • 2 1/2 tsp cornstarch

Instructions

  1. Heat olive oil in a large non-stick sauté pan over medium-high heat.
  2. Season salmon fillets with salt and pepper on both sides.
  3. Sear the salmon in the hot pan for about 3-4 minutes per side until browned and cooked through. Transfer to a plate.
  4. In the same pan, sauté garlic and rosemary for about 20 seconds until fragrant. Add 1/4 cup chicken broth and simmer until reduced.
  5. Stir in orange zest, fresh orange juice, lemon juice, and honey to create the glaze.
  6. Whisk remaining tablespoon of chicken broth with cornstarch in a small bowl, then add to the pan. Stir until thickened.
  7. Return salmon to the pan and spoon sauce over it before serving.
