  • 3 cups chicken stock
  • 1 cup whole milk
  • 16 ounces fresh potato gnocchi
  • 2 1/2 cups cooked chicken (torn into pieces)
  • 1 cup sweet peas
  • 1/4 cup all-purpose flour (or GF flour blend)
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Melt butter in a large skillet over medium heat. Add carrots, celery, onion, and salt; cook until softened (6-8 minutes).
  2. Stir in mushrooms and garlic; cook until mushrooms release moisture (about 5 minutes).
  3. Sprinkle in flour and cook for another 2 minutes while stirring.
  4. Gradually whisk in chicken stock and milk, along with Dijon mustard and Italian seasoning; simmer until thickened.
  5. Add gnocchi and cook uncovered for about 4-5 minutes until tender.
  6. Stir in cooked chicken and sweet peas; simmer until heated through (3-4 minutes).
  7. Fold in fresh herbs, season with salt and pepper, then let rest for about 5 minutes before serving.
