  • 3 medium Potatoes, peeled and diced
  • 1 medium Onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Beef Broth (or chicken broth)
  • 1 cup Cheddar Cheese, shredded
  • 1 tbsp Olive Oil for cooking
  • Fresh Parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
  2. Stir in diced potatoes and cook for 8-10 minutes until lightly browned.
  3. Remove potatoes; sauté onions and bell peppers in the same pan for 3-4 minutes until softened.
  4. Add paprika, onion powder, garlic powder, salt, and pepper; combine well.
  5. Return potatoes to the skillet with beef broth; cover and simmer for 5 minutes.
  6. Top with cheddar cheese; cover for an additional 2-3 minutes until cheese is melted.
