  • 1 can (10.5 oz) cream of chicken with herbs
  • 16 oz sour cream
  • 2.5 cups chicken stock
  • 5 garlic cloves (minced)
  • 3 cups fresh spinach leaves (or thawed frozen chopped spinach)
  • 16 oz dry orzo
  • 3 cups shredded Monterey Jack cheese
  • 2 cups shredded rotisserie chicken
  • Optional: crispy fried onions for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 casserole dish.
  2. In the casserole dish, combine cream of chicken soup, sour cream, chicken stock, minced garlic, salt, and pepper; whisk until smooth.
  3. Add in spinach leaves, shredded rotisserie chicken, half of the Monterey Jack cheese, and dry orzo; mix well.
  4. Top with remaining cheese and crispy fried onions. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until golden brown.
