  • 8 ounces gluten-free pasta (corn/quinoa or chickpea/lentil)
  • 3 cups boiling water
  • 1 can vegetable broth
  • 1 can fire-roasted tomatoes
  • 1 can artichoke hearts (drained)
  • 1 cup black olives
  • 1/2 purple onion (sliced)
  • 2 tablespoons fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon cumin
  • Sea salt and black pepper to taste

Instructions

  1. Bring 3 cups of water to a rolling boil in a large pot. Add the gluten-free pasta along with vegetable broth, onions, tomatoes, artichoke hearts, olives, thyme, and cumin.
  2. Stir the mixture and allow it to return to a boil over high heat.
  3. Reduce heat slightly and let it simmer, stirring occasionally until the pasta is tender and the sauce thickens.
  4. If needed, add hot water gradually to maintain creaminess.
  5. Season with sea salt and black pepper to taste before serving.
  6. Plate immediately and garnish with fresh basil or parmesan if desired.
