  • 2 Tbsp extra virgin olive oil
  • 3 stalks celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • pinch red pepper flakes
  • 14 ounces canned artichoke hearts, drained and chopped
  • 1/2 cup marinated sun-dried tomatoes, sliced
  • 32 ounces chicken stock or broth
  • 1 Tbsp lemon juice
  • 1 cup packed fresh spinach
  • 1/2 cup heavy cream
  • 1 cup shredded Asiago or Parmesan cheese

Instructions

  1. In a large soup pot or Dutch oven, heat olive oil over medium heat. Sauté diced celery, onion, minced garlic, and red pepper flakes for about 5 minutes until softened.
  2. Stir in chopped artichokes and sliced sun-dried tomatoes. Pour in chicken stock and add lemon juice. Simmer for an additional 5 minutes.
  3. Incorporate fresh spinach until wilted; then stir in heavy cream and season with salt and pepper. Allow to simmer until heated through.
  4. Remove from heat and mix in shredded cheese until melted. Serve warm with optional garnishes like fresh herbs or lemon zest.
