  • 1/2 cup mozzarella cheese

  • 1 tablespoon fresh thyme

Instructions

  1. In a medium bowl, mix warm water, sugar, and yeast; let sit until frothy (about 5 minutes).
  2. In a large bowl, combine flour and salt, then add the frothy yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover with a towel, and let rise for 1 to 1.5 hours until doubled in size.
  5. Preheat oven to 475°F (245°C) with a pizza stone or baking sheet inside.
  6. Prepare topping by mixing ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
  7. Roll out risen dough into a thin circle on a floured surface.
  8. Spread the cheese mixture over the dough, leaving space at the edges for crust.
  9. Bake for about 10-12 minutes until golden brown.
