  • 1 lb large shrimp, peeled and deveined
  • 12 oz orzo pasta
  • 4 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • Juice and zest of 1 lemon
  • 1 tbsp extra-virgin olive oil (for shrimp)
  • 1/2 tsp kosher salt (for shrimp)
  • 1/4 tsp freshly ground black pepper (for shrimp)
  • 1/2 tsp dried oregano (for shrimp)
  • 1/2 tsp smoked paprika (for shrimp)
  • 2 tbsp extra-virgin olive oil (for orzo)
  • 1 garlic clove, finely grated (for orzo)
  • 1/4 tsp crushed red pepper flakes (optional, for orzo)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 tbsp capers, rinsed and drained (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest. Arrange on the baking sheet in a single layer.
  3. Roast shrimp for about 8–10 minutes until opaque.
  4. Cook orzo according to package instructions; drain well.
  5. Stir in olive oil, lemon juice, garlic, and optional red pepper flakes into hot orzo.
  6. Fold in cherry tomatoes, spinach, parsley, and dill until just wilted.
  7. Mix in crumbled feta cheese and capers if desired.
  8. Top with roasted shrimp and serve warm or at room temperature.
