- 4 salmon fillets (5 oz each), skin removed
- Salt and pepper, to taste
- 1 1/2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil, finely chopped
- 2 teaspoons lemon zest
- 1/2 pound asparagus, trimmed
- 1 tablespoon butter
- 1/2 cup chicken broth
- 2 tablespoons fresh lemon juice
- 2 teaspoons cornstarch mixed with 2 teaspoons water
- Preheat the oven to 425°F. Season salmon fillets with salt and pepper.
- In a bowl, mix ricotta cheese, Parmesan cheese, chopped basil, lemon zest, and additional salt and pepper.
- Spread the mixture over each salmon fillet and place asparagus spears at the center. Roll tightly with the seam side down.
- Arrange on a greased baking sheet and bake for 15-20 minutes until cooked through.
- For the sauce: melt butter in a saucepan, add chicken broth and lemon juice, then stir in cornstarch mixture until thickened (3-5 minutes).
- Drizzle sauce over baked salmon rolls and serve.
