  • 4 salmon fillets (5 oz each), skin removed
  • Salt and pepper, to taste
  • 1 1/2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, finely chopped
  • 2 teaspoons lemon zest
  • 1/2 pound asparagus, trimmed
  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch mixed with 2 teaspoons water

Instructions

  1. Preheat the oven to 425°F. Season salmon fillets with salt and pepper.
  2. In a bowl, mix ricotta cheese, Parmesan cheese, chopped basil, lemon zest, and additional salt and pepper.
  3. Spread the mixture over each salmon fillet and place asparagus spears at the center. Roll tightly with the seam side down.
  4. Arrange on a greased baking sheet and bake for 15-20 minutes until cooked through.
  5. For the sauce: melt butter in a saucepan, add chicken broth and lemon juice, then stir in cornstarch mixture until thickened (3-5 minutes).
  6. Drizzle sauce over baked salmon rolls and serve.
