  • 1 cup thinly chopped low-moisture mozzarella

  • ¼ cup grated pecorino romano, plus more for serving
  • ⅓ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 teaspoons dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
