  • 1 egg yolk
  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • 1 tbsp thyme

  1. Prepare the dough by mixing flour, olive oil, salt, egg yolk, and warm water until smooth. Cover and let rest for 30 minutes.
  2. Preheat your oven to 220°C (428°F) while the dough rests.
  3. In a bowl, combine sour cream and crème fraîche; season with salt, pepper, and nutmeg.
  4. Slice the Hokkaido pumpkin into thin strips and onion into rings. Crumble feta cheese and chop walnuts.
  5. Roll out the rested dough thinly on a floured surface. Spread the cream mixture over it.
  6. Layer with pumpkin strips, onion rings, crumbled feta, and chopped walnuts on a parchment-lined baking sheet.
