  • 1 tbsp Olive oil
  • 1 small Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 4 cups Chicken broth (reduced sodium)
  • 1/2 cup Heavy cream
  • 1 can (4 oz) Green chiles (diced; drained)
  • 8 oz Cream cheese (cut into pieces)
  • 1 cup Mexican blend cheese (shredded)
  • 4 cups Shredded chicken
  • 1 tsp Cumin
  • 1 tsp Dried oregano
  • 1/4 tsp Cayenne pepper (optional)
  • 1/2 tsp Sea salt (to taste)
  • 1/2 tsp Black pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sauté diced onion for about 5-7 minutes until softened.
  2. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Pour in chicken broth, heavy cream, green chiles, cumin, oregano, cayenne pepper (if using), sea salt, and black pepper. Bring to a boil; reduce heat and simmer for about 40 minutes.
  4. Reduce heat to low and stir in cream cheese and shredded cheese until melted and smooth.
  5. Mix in shredded chicken and allow to simmer for another 5 minutes until heated through.
