  • 8 tablespoons unsalted butter (room temperature)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 cup all-purpose flour (plus more for dusting)
  • 3/4 cup dark or light corn syrup
  • 1/4 cup packed light or dark brown sugar
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups pecan pieces

Instructions

  1. Preheat oven to 350°F (175°C). Lightly coat an 8×8-inch baking pan with cooking spray.
  2. In a stand mixer, beat together the butter, granulated sugar, and kosher salt until creamy. Add in the flour until crumbly dough forms. Press into the bottom of the prepared pan and bake for about 20–22 minutes until golden-brown.
  3. While the crust bakes, whisk together the corn syrup, brown sugar, eggs, additional flour, vanilla extract, and kosher salt in a large bowl until smooth. Stir in pecan pieces.
  4. Once the crust is baked, pour the filling over it and spread evenly. Bake for another 25–30 minutes until set and dark golden-brown.
  5. Let cool completely before cutting into squares; refrigerate if desired for better slicing.
