  • 16 ounces rotini pasta
  • 1 cup Italian dressing
  • 2 cups cherry tomatoes (halved)
  • 1/2 cup red onion (chopped)
  • 1/2 cup sliced black olives
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup yellow bell pepper (chopped)
  • 1/2 cup green bell pepper (chopped)
  • 1/4 cup pepperoncini peppers (sliced)
  • 1/2 cup zucchini (chopped)
  • 8 ounces cubed turkey slices
  • 8 ounces mozzarella pearls
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup fresh basil (sliced)
  • 1/4 cup fresh flat leaf parsley (chopped)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine chopped vegetables: cherry tomatoes, red onion, black olives, bell peppers, and zucchini.
  3. Add cubed turkey slices, mozzarella pearls, parmesan cheese, basil, and parsley to the vegetable mixture; stir gently.
  4. In another bowl, mix cooled pasta with two-thirds of the salad dressing.
  5. Combine dressed pasta with the vegetable mixture; stir until evenly coated. Add more dressing if desired.
  6. Chill for at least one hour before serving to enhance flavors.
