  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed and rinsed)
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup whole wheat pastry flour
  • 1/3 cup apple vinegar
  • Fresh parsley for garnish

Instructions

  1. Sauté diced onion and sliced carrots in a Dutch oven over medium-low heat until the onion becomes translucent.
  2. Add minced garlic and cook briefly before incorporating rinsed jackfruit, thyme, bay leaves, and apple vinegar. Simmer until vinegar evaporates.
  3. Whisk together whole wheat flour with vegetable stock; pour into the pot to thicken the stew.
  4. Stir in smoked paprika and whole cloves; simmer for about 45 minutes until jackfruit is fork-tender.
  5. Add gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the top.
  6. Season with salt and pepper; finish with chopped parsley before serving.
