  • 1 pound ground lamb or beef
  • ¼ cup minced onion
  • 3 cloves garlic (minced)
  • 1 large egg
  • ½ cup finely crumbled feta cheese
  • 1 teaspoon Greek seasoning
  • ½ teaspoon salt
  • 12 cloves garlic (minced or pressed)
  • ¼ teaspoon salt (to taste)
  • Half of one European cucumber (peeled, grated, drained)
  • 1 cup plain yogurt (drained)
  • 1 tablespoon chopped fresh mint (plus more to taste)
  • 1 tablespoon chopped fresh dill
  • Freshly ground black pepper (to taste)
  • 1 tablespoon olive oil
  • 2 cups cooked rice (white or brown)
  • Juice of one half lemon (roughly 1 tablespoon)
  • ¼ teaspoon salt (to taste)
  • 1 cup tomatoes (diced, halved or chopped)
  • 1 cup diced cucumber (drained)
  • 1 tablespoon olive oil
  • ½ teaspoon salt (to taste)
  • Hummus
  • Olive oil
  • Crumbled feta
  • Kalamata olives
  • Chopped dill and parsley
  • Sumac
  • Pitas

Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, mix ground meat, onion, garlic, egg, feta cheese, Greek seasoning, and salt until combined. Form into small meatballs.
  2. Arrange meatballs on a parchment-lined baking sheet and bake for 20 minutes until cooked through.
  3. Prepare tzatziki by combining drained yogurt with grated cucumber, minced garlic, herbs, salt, and pepper.
  4. In a skillet, heat olive oil and stir in cooked rice with lemon juice and salt until warmed.
  5. Assemble bowls by layering lemon rice, meatballs, cucumber salad, and tzatziki.
