  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat. Dice the potatoes into small cubes and add them to the skillet with olive oil. Cook until golden brown.
  2. While the potatoes cook, finely chop the onion and garlic. Once the potatoes are done, set them aside and sauté the onion and garlic in the same skillet until translucent.
  3. Add the ground turkey to the skillet, breaking it apart as it cooks for about 6-8 minutes until no longer pink.
  4. Season with thyme, paprika, salt, and pepper; mix well before adding back the cooked potatoes.
  5. Pour in chicken broth to keep everything moist and cover the skillet for about five minutes to let flavors meld together.
  6. Finish with freshly chopped parsley before serving hot.
