  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and sauté chopped onion and minced garlic for about 2-3 minutes until fragrant.
  3. Add ground turkey to the skillet and cook until browned for about 5-7 minutes. Season with smoked paprika, cumin, chili powder, salt, and pepper.
  4. Stir in diced red bell pepper and spinach; cook for an additional couple of minutes.
  5. Boil diced sweet potatoes in a separate pot until tender (about 10 minutes), then drain well.
  6. Layer cooked sweet potatoes in a baking dish followed by the turkey mixture on top. Pour chicken broth over everything.
  7. If using cheese, sprinkle it on top before baking for about 15-20 minutes until hot and bubbly.
  8. Allow to cool slightly before serving.
