  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, combine zucchini, bell pepper, onion, olive oil, salt, pepper, oregano, and basil. Toss until coated.
  3. Grill seasoned vegetables for about 5-7 minutes until tender and marked.
  4. Sauté minced garlic in olive oil; add spinach until wilted.
  5. Assemble quesadillas by layering grilled vegetables, sautéed spinach, tomatoes, and cheeses on half of each tortilla. Fold over.
  6. Grill assembled quesadillas for about 3-4 minutes per side until golden brown and cheese is melted.
