  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup plain Greek yogurt
  • Fresh dill for tzatziki sauce

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes in a bowl.
  2. Pound chicken breasts to about 1/2 inch thick and marinate in the mixture for at least 30 minutes.
  3. While marinating, mix tzatziki ingredients: Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and chopped dill.
  4. Cook rice or quinoa according to package instructions and chop vegetables.
  5. Cook marinated chicken in an air fryer at 380°F for about 10-12 minutes until fully cooked (internal temperature of 165°F).
  6. Let chicken rest for five minutes before slicing.
  7. Assemble bowls: Layer rice/quinoa, veggies, sliced chicken, and tzatziki sauce.
