  • 1 free-range turkey (about 5 kg)
  • 2 onions (peeled, halved)
  • 1 lemon (halved)
  • 1 head of garlic (halved horizontally)
  • 6 bay leaves
  • Olive oil (to drizzle)
  • Sea salt and freshly ground black pepper
  • 375 g butter
  • 3 cloves garlic (peeled, crushed)
  • 2 small lemons (juice and grated zest)
  • A small bunch flat-leaf parsley leaves (chopped)

Instructions

  1. Preheat your oven to 220°C.
  2. In a large bowl, mix butter with salt, pepper, olive oil, lemon juice, lemon zest, parsley, and crushed garlic to create the herb butter.
  3. Season the turkey cavity with salt and pepper; stuff it with halved onions, lemons, garlic cloves, and two bay leaves.
  4. Loosen the skin of the turkey and spread herb butter underneath.
  5. Rub any remaining butter over the skin; season with salt, pepper, and drizzle with olive oil.
  6. Roast at 180°C for approximately 2½ hours while basting every half hour.
  7. Let the turkey rest for about 45 minutes before carving.
