  • 1 1/2 cups + 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup plain whole-milk yogurt
  • 1 cup sugar
  • 3 large eggs
  • 2 tsp grated orange zest
  • 1/2 cup vegetable oil
  • 1 1/2 cups cranberries (fresh or frozen)
  • 1/3 cup freshly squeezed orange juice
  • 1/3 cup sugar for glaze
  • 1 cup confectioners’ sugar (sifted)
  • 2 to 3 tbsp fresh orange juice for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan.
  2. In a bowl, whisk together flour (reserving 1 tablespoon), baking powder, and salt.
  3. In another bowl, combine yogurt, sugar, eggs, orange zest, vanilla extract, and vegetable oil until smooth.
  4. Fold cranberries into the wet mixture after sprinkling with reserved flour.
  5. Gradually mix the dry ingredients into the wet until just combined.
  6. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
  7. While cooling, whisk together glaze ingredients (sugar, confectioners' sugar, and orange juice) until smooth.
  8. Drizzle glaze over the warm loaf once cooled slightly.
