  • 1/8 tsp ground cloves
  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp ground ginger
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 2 egg yolks
  • 1 tsp vanilla
  • 1/3 cup unsulphured molasses

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla in a bowl until smooth. Chill while making the cookie dough.
  2. In a separate bowl, mix together granulated sugar, spices, flour, salt, and baking soda. Cream softened butter with brown sugar until fluffy; add egg yolks and vanilla. Gradually mix in dry ingredients to form dough.
  3. Preheat your oven. Scoop dough into balls, flatten slightly, place a teaspoon of cheesecake filling in center, and seal.
  4. Bake at 350°F (175°C) for about 11 minutes until just set and soft in the center. Cool on a wire rack before serving.
