  • 1 large bulb of garlic
  • 2.8 lbs baking potatoes
  • 5 tbsp butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Roast the garlic by wrapping it in foil with olive oil and baking at 180°C (356°F) for 50-60 minutes.
  2. Boil peeled and diced baking potatoes in salted water until fork-tender; drain well.
  3. Mash the drained potatoes with melted butter, cream, roasted garlic, and Parmesan until smooth.
  4. Stir in egg yolks one at a time; season with salt and pepper.
  5. Pipe the mixture into swirls on a lined baking tray.
  6. Bake at 200°C (400°F) for 15-20 minutes until golden brown.
