  • 8 ounces pasta (linguine recommended)
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 56 cloves garlic (minced)
  • 12 ounces little tomatoes (halved)
  • 1/4 teaspoon Italian seasoning
  • 2 cups packed fresh baby spinach
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Boil salted water in a pot and cook the pasta al dente according to package instructions.
  2. While the pasta cooks, heat olive oil and butter in a skillet over medium-high heat. Add minced garlic, tomatoes, and Italian seasoning; cook until tomatoes soften.
  3. Stir in fresh spinach until wilted.
  4. Reserve some pasta water before draining the pasta. Add drained pasta to the skillet along with reserved water and parmesan cheese; toss to combine.
  5. Season with salt and pepper to taste. Serve warm.
