  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the Pâte Sucrée dough, divide into portions, and press into tartlet pans. Freeze for 30 minutes.
  2. Preheat oven to 375°F. Prick the shells with a fork, line with parchment paper, fill with weights, and bake for 10-15 minutes until golden brown.
  3. In a saucepan, combine chopped strawberries and sugar; simmer for about 20 minutes to make jam.
  4. In another saucepan, heat condensed milk, whole milk, and heavy cream until simmering. Mix egg yolks and cornstarch in a bowl before gradually adding to the hot mixture; stir until thickened.
  5. Assemble by spreading strawberry jam in each tart shell, piping in pastry cream, and topping with fresh strawberry halves.
