  • 1 3/4 cups packed light brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla essence
  • 1 1/2 cups plain flour
  • 1 cup mixed peel
  • 1 cup chopped candied cherries
  • 1/2 cup chopped candied pineapple
  • 1/2 cup chopped dried dates

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9 inch baking dish or line it with parchment paper.
  3. In a large mixing bowl, cream together softened butter and brown sugar until fluffy.
  4. Beat in eggs one at a time along with vanilla essence and salt.
  5. Gradually sift in plain flour while gently folding into the mixture.
  6. Fold in mixed peel, candied cherries, chopped pineapple, and dates until evenly distributed.
  7. Pour batter into the prepared dish and smooth the top.
  8. Bake for approximately 40 minutes or until golden brown; a toothpick should come out clean.
