  • 10 oz chicken sausage (sliced)
  • 24 oz chicken broth
  • 1 cup chopped green peppers
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cups frozen chopped okra
  • 14.5 oz diced tomatoes (optional)
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon cayenne pepper (optional for spicy)
  • Salt and pepper to taste

Instructions

  1. Sauté sliced chicken sausage in a skillet until browned.
  2. In the same skillet, make a roux with olive oil, butter, and flour until deep brown.
  3. Add chopped veggies to the roux and cook briefly.
  4. Mix in spices and garlic.
  5. Transfer everything to a slow cooker along with chicken broth and okra; place chicken on top.
  6. Cook on high for 3-4 hours or low for 7-8 hours.
  7. Shred cooked chicken before adding raw shrimp; cook until shrimp is pink.
  8. Serve hot with crusty bread or rice.
