  • 1 bell pepper, seeded and chopped

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 2 cups cooked chicken, shredded or cut into bite-sized pieces
  • 16 ounces salsa verde (jarred)
  • 10 ounces diced tomatoes with green chilies (canned)
  • 2 cups chicken stock
  • 30 ounces fire-roasted diced tomatoes (canned)
  • 15 ounces black beans (canned, rinsed and drained)

Instructions

  1. In a large pan or Dutch oven over medium heat, add olive oil along with the chopped onion and bell pepper. Sauté for about five minutes until softened.
  2. Stir in cooked chicken, chili powder, and cumin; mix well to coat the chicken.
  3. Add salsa verde, fire-roasted tomatoes, diced tomatoes with green chilies, chicken stock, and black beans. Mix until combined.
  4. Bring to a gentle simmer on low heat for about ten minutes to meld flavors.
