  • 1 1/2 lbs skinless, boneless chicken thighs
  • 3/4 cup pineapple juice
  • 1/2 cup coconut aminos
  • 1/2 cup ketchup
  • 20 oz can pineapple chunks
  • Sea salt and black pepper (to taste)

Instructions

  1. Prepare the Marinade: In a saucepan, combine pineapple juice, coconut aminos, ketchup, brown sugar, Frank’s Red Hot sauce, minced garlic, and ginger. Bring to a boil and then simmer for 10-12 minutes until thickened.
  2. Marinate the Chicken: Cut chicken into bite-sized pieces and place in a bowl. Add cooled marinade, mix well, and refrigerate for at least one hour.
  3. Assemble Kabobs: Drain pineapple chunks and cut them into similar size pieces as the chicken. Thread chicken and pineapple alternately onto skewers; season with sea salt and black pepper.
  4. Grill Kabobs: Preheat grill to medium-high heat. Grill kabobs for about 10-12 minutes, turning occasionally and brushing with additional marinade.
  5. Serve: Remove from grill once cooked through (internal temperature should reach 165°F). Serve with remaining sauce on the side.
