Ingredients

Scale
  • 2 eggs (room temperature)
  • 70 g sugar (white granulated)
  • 1 ½ tbsp honey
  • ⅛ tsp salt (fine sea salt preferred)
  • 120 g cake flour (low-protein, substitute with all-purpose)
  • ½ tsp baking soda
  • ½ tsp cooking oil (neutral flavor)
  • 3 tbsp water (room temperature)
  • cooking oil (for frying)
  • 300 g red bean paste (anko)

Instructions

  1. In a mixing bowl, whisk the eggs until frothy. Add sugar, honey, and salt; mix well.
  2. Sift cake flour and baking soda into another bowl. Gradually incorporate this into the egg mixture until just combined.
  3. Stir in water and cooking oil; let the batter rest for about 10 minutes.
  4. Heat a non-stick skillet over medium-low heat, greasing lightly with cooking oil. Pour about two tablespoons of batter for each pancake and cook until bubbles form on top. Flip and cook until golden brown.
  5. Spread red bean paste on one pancake and top with another to assemble your dorayaki.
