  • 2 ¼ tsp active dry yeast
  • 1 ¼ cups warm water (105°F–110°F)
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil (plus more for brushing)
  • 1 tbsp Italian herb blend
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese

Instructions

  1. Activate the yeast by mixing warm water, sugar, and yeast in a bowl. Let it sit for about 5–7 minutes until foamy.
  2. Add olive oil, salt, and half of the flour to the yeast mixture; stir until combined. Gradually mix in remaining flour until a soft dough forms.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm place until doubled in size (1–1½ hours).
  5. Punch down the risen dough, shape it into a rectangle, sprinkle with minced garlic and cheeses.
  6. Roll up jelly-roll style and place seam-side down in a greased loaf pan. Let it rise again for about 30–40 minutes.
  7. Preheat oven to 375°F (190°C). Brush the top with olive oil and sprinkle with herbs.
  8. Bake for about 25–30 minutes until golden brown and hollow-sounding when tapped.
  9. Cool slightly before slicing and garnish with fresh parsley if desired.
